Salva Cremasco comes from hillside farms in Lombardy and was traditionally made from excess milk and saved from spoiling.
Under its natural rind, the paste is aromatic and bright, with and dry, crumbly consistency the closer you get to the center.
It is perfect accompanied by white wines and lagers, with fruit chutney, caponata, pears, soft bread or rolls.
