Fontina has been made in the Valle d’Aosta area since the 12th century. The cows that produce the milk for Fontina graze on high-altitude Alpine pastures dotted with wildflowers and native herbs.
Best noted for its value as a savory and fruity table cheese, its slightly grassy flavor embodies the taste of a true raw milk cheese.
The nutty, mushroom flavors of Fontina contrast fabulously with a sweet, fruity white wine and a Belgian-style saison beer. It can also be melted into sauces, thickly shredded over pasta or pizza, or pressed into a gooey grilled sandwich.
