Taleggio is a cheese made with with whole cow’s milk, produced since the 10^th. It originates in Val Taleggio, Lombardy, which gives to the cheese its name.

Taleggio's rind is thin, with a soft consistency and naturally pink in colour. The centre of the cheese is more crumbly with a sweet, slightly acidic, and aromatic taste and an aftertaste of truffle.

The cheese is aged for about 40 days in traditional caves or aging rooms with similar temperature and humidity. Still today, you can find artisanal Taleggio cheese, especially in the mountains.
