Gorgonzola is made with unskimmed pasteurized milk and is prepared by making alternate layers of hot and cold curds.
Gorgonzola Piccante has been aged for over 3 months hence it is a far more robust version with sharp tasty flavour and has harder consistency as well as the typically crumbly texture.
During the aging process metal rods are quickly inserted and removed, creating air channels that allow the mold spores to grow causing its characteristic veining.
