Calamarata Liscia Artisanal Gluten-free Pasta
Artisanal Gluten-free Pasta Calamarata Liscia
La Fabbrica della Pasta di Gragnano
Certified by the Italian Celiac Association (AIC)
As the name implies, calamarata takes its name from calamari and is shaped like calamari rings. It is normally a little thick and often with a slightly rough surface, similar to paccheri but narrower.
The most common traditional pasta dish made with squid in italy is called “La Calamarata”, taking its name from the pasta itself, served with calamari rings which are more or less the same size and colour as the pasta.
This artisanal pasta is bronze drawn and slowly dried at low temperature and is especially made for those with gluten-related disorders, including celiac disease.
