Speck dell’Alto Adige is a sightly smoked ham made from lean, firm pork thighs, produced in Südtirol, northern Italy. The prosciutto is cold-smoked for 20 days over non-resinous woods such as juniper, beech or ash.
Speck hams are spread with a curing mixture of aromas such as salt, juniper berries, bay leaves, cinnamon, nutmeg, coriander, garlic, paprika, and black pepper.
It is used for pasta, risotto and pizza, for antipasti and tasty snacks with whole grain bread, Taleggio or Fontina, accompanied by a full-bodied red wine.
