Buffalo mozzarella is the most complete food of all, recommended by most of the mediterranean diets. It has a sweet, fresh, sour taste and it's encased in a thin white layer which is almost glazed, smooth and elastic.

The term mozzarella derives from the italian “mozzare” which means “cutting by hand”, separating from the curd, and serving in individual ball-like pieces.
