The origin of this elixir can be attributed to the Romans, which cooked grape must. The term “balsamic” is more recent and derives from its historic use as a remedy for all ills.

After pressing grapes, musts are cooked and left to age in barrels batteries. Balsamic vinegar is rich, glossy, deep brown in color, and has a complex flavour that balances the natural sweet and sour elements of the cooked grape juice with hints of wood from the casks.

Ideal use is as a condiment, but also matched on meat and fish, cheese, strawberry and peache-type fruits, tropical fruits and ice cream.
